Cacao Beans
Cacao beans are the seeds of the cocoa tree (Theobroma cacao) which have gone through a fermentation and drying process and are ready to be processed. Cocoa beans are famous as the basic ingredient for making chocolate. Cocoa pods have thick skin, about 3 cm. The fruit flesh, called pulp, is not used. This pulp contains sugar and helps the cocoa bean fermentation process. Each cocoa pod contains 30-50 seeds. The color of the seeds before the fermentation and drying process is white, and then turns purplish or brownish red. Indonesian cocoa has advantages in fat content and the ability to produce quality cocoa powder
